Sustainability Problem and Proposed Solution: 

It takes more land, water, and energy to produce meat. Going meatless once a week can help reduce our carbon footprint and save precious resources like fossil fuels and fresh water. UCSC implemented meatless Mondays in campus dining halls in 2010 so that every Monday the five campus dining halls rotate to offer a completely meatless menu.
